A new study revealed which people may be harmed by almonds and spinach

Researchers at the University of North Carolina have conducted a study linking elevated levels of oxalates to inflammation within the mucous membrane associated with ulcerative colitis. The research focuses on the metabolic pathways of oxalates, a naturally occurring compound present in various plant-based food products. The investigation specifically examined the specialized transporter proteins responsible for absorbing oxalates from the intestinal tract.

The study found that both SLC26A2 and SLC26A3, key proteins in this absorption process, exhibited consistent and significant reductions in the intestinal tissue samples taken from patients diagnosed with both ulcerative colitis and Crohn’s disease. Importantly, this reduction was observed across all areas of affected tissue, irrespective of the overall degree of inflammation present. The findings suggest a direct correlation between the severity of inflammation and the expression levels of these transporter proteins; as tissue inflammation increases, the expression of these transporters decreases.

Consequently, the mechanism suggests that dietary oxalates are not being properly absorbed by the intestine. This impaired absorption leads to the accumulation of oxalates within the intestinal lumen, which the study confirmed were present in the affected tissue samples. These results provide insight into how dietary components may contribute to the inflammatory processes seen in these gastrointestinal conditions.
