The preparation time is approximately 20 minutes, making it an ideal starter for a light meal suitable for three to four people. Ingredients:

230g traditional Spanish soup gazpacho* base
* 500g cucumber
* 300g yellow tomatoes
* 300g ripe peaches
* 30g blue onion
* 1 clove garlic
* 1/2 green lemon
* 110ml cold water
* 40ml extra virgin olive oil
* 1/2 teaspoon salt
* 1/2 teaspoon ground four-spice mixture
* 50g favorite crisp elements
* Garnish: Favorite greens

Preparation Method:

To prepare this gazpacho, combine the cucumber, yellow tomatoes, peaches, blue onion, garlic, green lemon, cold water, extra virgin olive oil, salt, and four-spice mixture in a blender.

Process the ingredients until a smooth, consistent texture is achieved. The resulting soup should be chilled thoroughly before serving. For plating, ladle the chilled gazpacho into shallow bowls.

This preparation highlights the natural sweetness of the peaches against the tartness of the yellow tomatoes, resulting in a balanced and refreshing culinary experience.
